Southwestern Freekeh Pilaf

Ingredients
  • 1C Freekeh
  • ¾t cumin
  • ½ red pepper minced
  • ½ C red onion, minced
  • ½C snap peas, diced
  • ¼C chopped fresh cilantro
  • juice of half a lime
  • ⅛C + 1T olive oil, divided
  • 2 cloves, garlic, crushed
  • ½t dried crushed red pepper
  • Salt and pepper to taste
Instructions
  1. Cook Freekeh according to package directions.
  2. In a separate pan, saute onions and peppers in 1T olive oil. Add snap peas and cook a bit more.
  3. When freekeh is tender and finished cooking, remove from heat, add veggies to it along with seasonings, olive oil and lime juice.
  4. Serve and enjoy.
