Southwestern Freekeh Pilaf |

- 1C Freekeh
- ¾t cumin
- ½ red pepper minced
- ½ C red onion, minced
- ½C snap peas, diced
- ¼C chopped fresh cilantro
- juice of half a lime
- ⅛C + 1T olive oil, divided
- 2 cloves, garlic, crushed
- ½t dried crushed red pepper
- Salt and pepper to taste
- Cook Freekeh according to package directions.
- In a separate pan, saute onions and peppers in 1T olive oil. Add snap peas and cook a bit more.
- When freekeh is tender and finished cooking, remove from heat, add veggies to it along with seasonings, olive oil and lime juice.
- Serve and enjoy.
