- 4 Slices Udi's Gluten-Free Whole Grain Bread
- ½C Milk of your choice
- ½ Scoop of your favorite vanilla protein powder
- 2 Large eggs
- ½t Vanilla extract
- 2T Butter or oil for the pan
- 4 Wooden skewers, broken in half
- Fillings of your choice: Assorted fruit, breakfast sausage, jam and nut butter are all tasty options. I used berries, sauteed cinnamon apples, antibiotic-free chicken breakfast sausage, bananas and almond butter. The possibilities are endless.
- Heat butter or oil in a skillet.
- Whip together eggs, milk, protein powder and vanilla in a bowl.
- Soak each slice of bread one at a time in the mixture and place on hot skillet, turning once so each side is golden brown.
- Remove from pan and cut each slice into quarters.
- Create a tower by alternating a square of french toast with your fruit or topping of choice. Thread a skewer through each one to hold together.
- Dust with powdered sugar, serve with maple syrup for dipping or enjoy them just as they are.
