Pilsen Quinoa & Egg Power Bowl |

- ½C Quinoa, rinsed, drained and cooked according to pkg. directions.
- 2-3 Eggland's Best Eggs
- ¼C Chopped Red Onion
- ¼C Chopped Red Bell Pepper
- 1T Olive or Grapeseed Oil
- ½t Ground Cumin
- Dash Garlic Powder
- 1T Fresh Lime Juice
- ½C Sweetcorn Kernels
- ½C Black Beans
- ½C Tomatoes, chopped
- ½ Avocado
- Salt & Pepper to taste
- ¼C Cilantro
- Add cumin to cooked quinoa and season with garlic powder and lime juice.
- Divide quinoa among individual bowls.
- Top quinoa with corn, black beans and tomatoes.
- Heat oil In a skillet and saute onion and red pepper.
- Add in eggs and scramble together. Divide among the bowls.
- Top each bowl with avocado chunks and cilantro.
