Pilsen Quinoa & Egg Power Bowl

Ingredients
  • ½C Quinoa, rinsed, drained and cooked according to pkg. directions.
  • 2-3 Eggland's Best Eggs
  • ¼C Chopped Red Onion
  • ¼C Chopped Red Bell Pepper
  • 1T Olive or Grapeseed Oil
  • ½t Ground Cumin
  • Dash Garlic Powder
  • 1T Fresh Lime Juice
  • ½C Sweetcorn Kernels
  • ½C Black Beans
  • ½C Tomatoes, chopped
  • ½ Avocado
  • Salt & Pepper to taste
  • ¼C Cilantro
Instructions
  1. Add cumin to cooked quinoa and season with garlic powder and lime juice.
  2. Divide quinoa among individual bowls.
  3. Top quinoa with corn, black beans and tomatoes.
  4. Heat oil In a skillet and saute onion and red pepper.
  5. Add in eggs and scramble together. Divide among the bowls.
  6. Top each bowl with avocado chunks and cilantro.
