- ½C Mashed avocado
- 1C Sugar, reserving 2T (I used NOW Foods Coconut Sugar)
- 1t Vanilla
- 2 Eggs
- 2C Flour (I used white whole wheat flour)
- 2T NOW Foods Triple Omega Seed Mix
- 1t Baking powder
- 1t Baking soda
- ¼t salt
- Preheat oven to 350 degrees.
- Grease a 9x5x3-inch loaf pan.
- Cream avocado and sugar, reserving 2T for topping.
- Work together until light and fluffy. Add eggs and vanilla, beating well.
- Sift together flour, baking soda, baking powder and salt.
- Add dry ingredients to the creamed mixture, stirring until well combined.
- Fold in mashed bananas and Triple Omega Seed Mix.
- Pour batter into the greased pan. Sprinkle 2T sugar over top of loaf.
- Bake 60 minutes or until a toothpick comes out clean. Cool in pan for 20 minutes then remove to a cooling rack.
