Tricked Out Banana Bread

Ingredients
  • ½C Mashed avocado
  • 1C Sugar, reserving 2T (I used NOW Foods Coconut Sugar)
  • 1t Vanilla
  • 2 Eggs
  • 2C Flour (I used white whole wheat flour)
  • 2T NOW Foods Triple Omega Seed Mix
  • 1t Baking powder
  • 1t Baking soda
  • ¼t salt
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease a 9x5x3-inch loaf pan.
  3. Cream avocado and sugar, reserving 2T for topping.
  4. Work together until light and fluffy. Add eggs and vanilla, beating well.
  5. Sift together flour, baking soda, baking powder and salt.
  6. Add dry ingredients to the creamed mixture, stirring until well combined.
  7. Fold in mashed bananas and Triple Omega Seed Mix.
  8. Pour batter into the greased pan. Sprinkle 2T sugar over top of loaf.
  9. Bake 60 minutes or until a toothpick comes out clean. Cool in pan for 20 minutes then remove to a cooling rack.
