Roasted Winter Squash w/Quinoa Pilaf

Ingredients
  • 1 Acorn Squash
  • 1C Now Foods Tri-Color Quinoa, rinsed
  • 2C Veggie Broth
  • ½ cup each diced onion, diced celery, diced bell pepper
  • 2T give or take, Ellyndale garlic-infused coconut oil
Instructions
  1. Bring broth to a boil and add quinoa, simmer until liquid is absorbed.
  2. Preheat oven to 450.
  3. Cut squash in half and clean out seeds. Rub inside with 1T Coconut Oil. Place open side down on a roasting pan and roast 30 minutes, until squash is fork tender. Remove from oven.
  4. Melt the remaining tablespoon of coconut oil in a saute pan and add diced veggies. Saute until tender. Add veggies to the quinoa. Fill each half of squash with quinoa mixture. Cut each half again so you have quarters. Serves 4.
