Grilled Lemon-Herb Shrimp

Ingredients
  • 1 lb Raw Shrimp, peeled and deveined
  • 1 Clove Garlic
  • 2T Fresh Basil
  • 2T Fresh Greek Oregano
  • 2T Fresh Thyme (I used lemon thyme)
  • Juice of half a lemon
  • 4T Now Foods Avocado oil (olive oil works too)
  • 1t Sea Salt
  • Ground black pepper to taste
Instructions
  1. Put garlic, salt and 2T of the oil in a mortar & pestle or food processor. Grind until smooth. Add in herbs and remaining oil. Continue grinding until smooth.
  2. Pour mixture over shrimp. Cover and let marinate in the fridge for 1-2 hours.
  3. Thread shrimp on skewers or cook in a grill basket over medium heat, 2 minutes per side or until shrimp looks pink and no longer translucent.
