Grilled Lemon-Herb Shrimp |

- 1 lb Raw Shrimp, peeled and deveined
- 1 Clove Garlic
- 2T Fresh Basil
- 2T Fresh Greek Oregano
- 2T Fresh Thyme (I used lemon thyme)
- Juice of half a lemon
- 4T Now Foods Avocado oil (olive oil works too)
- 1t Sea Salt
- Ground black pepper to taste
- Put garlic, salt and 2T of the oil in a mortar & pestle or food processor. Grind until smooth. Add in herbs and remaining oil. Continue grinding until smooth.
- Pour mixture over shrimp. Cover and let marinate in the fridge for 1-2 hours.
- Thread shrimp on skewers or cook in a grill basket over medium heat, 2 minutes per side or until shrimp looks pink and no longer translucent.
