Pumpkin Spice Protein Muffins

Ingredients
  • 1-1/2C White Whole Wheat Flour
  • 1C Pumpkin Puree
  • ¼C Great Lakes Collagen Hydrolysate
  • ½C Now Foods Vanilla Protein Powder of your choice
  • 2 Eggs
  • 1t Baking Soda
  • 3t Pumpkin Spice Blend
  • 1t Salt
  • 1t Vanilla
  • 2T Now Foods Triple Omega Seed Mix, divided
  • 1t Cinnamon
  • ½C Honey or Maple Syrup
  • ¼C Milk of your choice
  • 1 Avocado
  • ½C Mix-ins (optional, I used chopped pecans but chocolate chips, raisins, etc are also great)
Instructions
  1. Preheat oven to 375F.
  2. In a large mixing bowl combine flour, Collagen Hydrolysate, protein powder, pumpkin spice blend, salt, baking soda and 1T of the Triple Omega Seed Mix.
  3. Add in pumpkin puree, honey/maple syrup, milk and avocado. Add eggs one at a time.Mix until combined but don't overmix.
  4. Fold in any mix-ins.
  5. Line muffin tins with 16 paper muffin cups and spoon batter into each.
  6. Top each muffin with cinnamon and remaining tablespoon of Triple Omega Seed Mix.
  7. Bake for 25 minutes or until toothpick comes out clean. Remove from oven, cool and enjoy!
