Pumpkin Spice Protein Muffins |

- 1-1/2C White Whole Wheat Flour
- 1C Pumpkin Puree
- ¼C Great Lakes Collagen Hydrolysate
- ½C Now Foods Vanilla Protein Powder of your choice
- 2 Eggs
- 1t Baking Soda
- 3t Pumpkin Spice Blend
- 1t Salt
- 1t Vanilla
- 2T Now Foods Triple Omega Seed Mix, divided
- 1t Cinnamon
- ½C Honey or Maple Syrup
- ¼C Milk of your choice
- 1 Avocado
- ½C Mix-ins (optional, I used chopped pecans but chocolate chips, raisins, etc are also great)
- Preheat oven to 375F.
- In a large mixing bowl combine flour, Collagen Hydrolysate, protein powder, pumpkin spice blend, salt, baking soda and 1T of the Triple Omega Seed Mix.
- Add in pumpkin puree, honey/maple syrup, milk and avocado. Add eggs one at a time.Mix until combined but don't overmix.
- Fold in any mix-ins.
- Line muffin tins with 16 paper muffin cups and spoon batter into each.
- Top each muffin with cinnamon and remaining tablespoon of Triple Omega Seed Mix.
- Bake for 25 minutes or until toothpick comes out clean. Remove from oven, cool and enjoy!
