Carrot Cake Protein Bites

Ingredients
  • 1C Grated Carrots
  • ¾C Chopped Dates
  • ¾C Chopped Walnuts
  • ¼C Raisins
  • ⅓C Vanilla Protein Powder
  • 2t Vanilla Extract
  • 4-6T Coconut Flour
  • 1T Chia Seeds
  • 1T Ground Flaxseeds
  • ¾t Cinnamon
  • ½t Ground Ginger
  • Pinch of Nutmeg
Instructions
  1. Combine carrots and dates in a food processor.
  2. Add spices, protein powder, vanilla and coconut flour.
  3. Transfer mixture from food processor to a mixing bowl.
  4. Mix in raisins and walnuts.
  5. Roll tablespoon-size bits of dough into balls and place on parchment-lined sheet.
  6. Chill.
  7. Bites can be kept in the fridge for a few days and they freeze well.
