Grilled Black Cod with Pineapple Salsa

Ingredients
  • 1 lb. Black Cod Fillet
  • Olive OIl for brushing on fish
  • Pinches of the following:
  • Salt & Pepper
  • Cumin
  • Oregano
  • Garlic Powder
  • Pineapple Salsa
  • 2C Fresh Diced Pineapple
  • 1 Handful Cilantro, Chopped
  • ½C Diced Tomatoes
  • ½C Diced Cucumber
  • ½C Diced Red Onion
  • Juice of one Lime
Instructions
  1. Combine Salsa Ingredients and refrigerate, allowing flavors to blend.
  2. Brush non-skin side of the black cod with olive oil.
  3. Sprinkle on seasonings.
  4. Place in oiled grill basket or foil, over medium heat, skin side UP
  5. Cook for 4 minutes.
  6. Turn over so skin side is DOWN and cook another 3 minutes.
  7. Remove from grill. Cut into 4 servings remove skin and enjoy!
