Grilled Black Cod with Pineapple Salsa |

- 1 lb. Black Cod Fillet
- Olive OIl for brushing on fish
- Pinches of the following:
- Salt & Pepper
- Cumin
- Oregano
- Garlic Powder
- Pineapple Salsa
- 2C Fresh Diced Pineapple
- 1 Handful Cilantro, Chopped
- ½C Diced Tomatoes
- ½C Diced Cucumber
- ½C Diced Red Onion
- Juice of one Lime
- Combine Salsa Ingredients and refrigerate, allowing flavors to blend.
- Brush non-skin side of the black cod with olive oil.
- Sprinkle on seasonings.
- Place in oiled grill basket or foil, over medium heat, skin side UP
- Cook for 4 minutes.
- Turn over so skin side is DOWN and cook another 3 minutes.
- Remove from grill. Cut into 4 servings remove skin and enjoy!
