- 1lb. Cod Fillet
- 2T Butter or Olive OIl
- 1 Clove Garlic, Chopped
- 1t Orange Zest
- Juice of Half an Orange
- Citrus Slices of your choice
- Handful of Chopped CIlantro
- Salt and Pepper to taste
- Melt butter or oil over medium heat.
- Add garlic and cook for a minute or two, making sure not to burn it.
- Add in the orange zest and cook another 30 seconds or so.
- Brush the butter mixture over the fish
- Sprinkle with salt, pepper and cilantro.
- Place Citrus wedges atop fillets
- Squeeze juice of the orange over the top
- Transfer to a grill basket (recommended) and gill over medium heat, covered, for 10 minutes, until fish is opaque and flakes with a fork.
