Gluten-Free Gingerbread Protein Waffles |

- 6T Sweet potato puree (pumpkin or winter squash puree would work too)
- 2 Scoops Now Foods Vanilla Protein Powder
- 2 Eggs
- 2T Water
- 2t Cinnamon
- ¼t Allspice
- 1t Ground Ginger
- Pinch or Nutmeg and Ground Clove (optional)
- Combine all ingredients in a mixing bowl
- Mix until combined
- Brush waffle iron with butter or coat with cooking spray
- Let batter rest while waffle iron comes up to temperature
- Cook according to your waffle maker's instructions.
- Serve warm with a dusting of powdered sugar or maple syrup.
