Gluten-Free Gingerbread Protein Waffles

Ingredients
  • 6T Sweet potato puree (pumpkin or winter squash puree would work too)
  • 2 Scoops Now Foods Vanilla Protein Powder
  • 2 Eggs
  • 2T Water
  • 2t Cinnamon
  • ¼t Allspice
  • 1t Ground Ginger
  • Pinch or Nutmeg and Ground Clove (optional)
Instructions
  1. Combine all ingredients in a mixing bowl
  2. Mix until combined
  3. Brush waffle iron with butter or coat with cooking spray
  4. Let batter rest while waffle iron comes up to temperature
  5. Cook according to your waffle maker's instructions.
  6. Serve warm with a dusting of powdered sugar or maple syrup.
