Foodie Friday and Giveaway Winner

In the old days I often spent my afternoons with a bag of chocolate chips. These days you’re more likely to find me with veggies and hummus. When I saw soy oil (no bueno for thyroid issues) on the label of the hummus I was buying at the grocery store, I knew the time had come to take a stab at making my own. Honestly, it couldn’t have been easier. Many of you asked for the recipe:
hummus

2 Cloves garlic, chopped
1 Can of garbanzo beans (19 oz.)
4T Lemon Juice
3T Tahini
1/2t salt
Ground Cumin to taste
1T Olive oil
1/2C Liquid reserved from beans

Whip up garlic and garbanzo beans in a blender. Add in the next four ingredients. Blend until smooth and creamy adding in some of the reserved liquid from the beans if needed. Spoon into a serving dish, top with olive oil and dig in!
Have fun with the garnish: Try diced roasted red peppers, toasted pinenuts, slivered almonds, whole garbanzo beans, herbs, etc.
Makes about 2-1/2 cups.

    I have made my own hummus with white beans but it just wasnt’t the same as using chickpeas. I loooove hummus.

    I love making my own hummus. So easy and you can jazz it up so many different ways. Have you tried peeling the chickpeas? Makes it even smoother.

    I have tried making hummus once and it was a disaster. It seems so simple but…

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did. I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
