Garden Fritters

I conjured this recipe in a futile attempt to keep pace with the zucchini that is exploding in our garden. I guess I could’ve made 767 loaves of zucchini bread…oh wait, I pretty much did. Turns out there wasn’t all that much zucchini left. So instead of 2 cups of zucchini, I worked in some carrots. Really use whatever you have. Herbs, spinach, kale, it’s all good! These are a fun side dish and awesome on their own too.

Garden Fritters
Serves 2
1-1/2C Grated zucchini
1/2C Grated sweet potato
1/2C Grated carrots (optional)
2T minced red pepper (optional, adds great color though)
1/4C minced onion
Kosher salt
1T Flour
1 Egg
1T Butter
Salt and pepper to taste
Place grated zucchini, potato and carrots in a colander, sprinkle with salt and let sit for 30 minutes to drain.
Squeeze out veggies, place between paper towels and pat out any moisture. This is critical. Sprinkle with flour.
Whisk up the egg in a large bowl and add in the veggies. Heat a skillet to medium and melt the butter. Drop spoonfuls of mixture and press to flatten so they crisp up.
Cook til golden brown on each side. Serve immediately. Makes 5-6 palm-sized fritters.

    I LOVE veggie fritters. thank you for the recipe.
    as for the zucchini – my neighbors ran away from me. hid. because they didn’t want anymore zucchini from me.
    so i shredded and froze in batches. I sliced and froze on a tray. then threw them in a freezer bag to use later. this way, i have organic yummy zucchini all year long.
    oh ya. google ‘pineapple zucchini bread cooking light’. but i make them into muffins. and freeze. then i have a delicious breakfast whenever i need.

    Yum! I wish I could grow somethhing, anything. I grew kids but they just eat the food that other people grow.

    This sounds pretty good.They make something like this in Thailand but it is literally floating in oil haha. This is on the list of “have to try”. Definitely a healthier option.

    I love this idea… for me flax instead of flour, and coconut oil instead of butter… but wowzers! looks great!

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did.
