Strawberry-Pineapple Smoothie

February 15, 2014

Week 2 of the Lorna Jane/Fit Approach Move Nourish Believe Challenge is complete. This week we focused on how we NOURISH ourselves. In case you didn’t catch it on Instagram, here’s how things went down:

meatlessmonday

Meatless Monday: This one is self-explanatory.

Tuesday: Take your lunch to work.

lunch

I went with some simple tuna and avocado on Udi’s toast. Peppers, carrots and strawberries on the side.

Wednesday: Write down your food.

journal

I can’t lie I am not so great at food journaling. I’ve tried notebooks and various apps, but so far nothing lasts more than maybe a week. Maybe I’m just more intuitive…..or lazy.

Thursday: Make a smoothie:

shake

This one was a cinch. I make smoothies almost every day. Since I was coming off of a tough workout, I put pineapple in this one because the fruit enzymes help reduced DOMS.

Strawberry-Pineapple Smoothie

  • 6-8oz. coconut milk (or whatever you like)
  • Handful of frozen, chopped strawberries
  • Handful of frozen chopped pineapple pieces
  • 1T chia seeds
  • 1 scoop Vega Vanilla Protein

Whiz it up in a blender and enjoy.

Friday: Go raw!

rawI made this recipe from the Move Nourish Believe website. Oh wow is it ever delicious. Could not resist the romantic heart shape for Valentine’s Day.

This week was the main reason that I didn’t do the challenge. I tend to eat meat every day, don’t “go to work” exactly, rarely have smoothies, and never record my food – I knew it would be a week of epic fails so I just didn’t do the challenge. Fun to read everyone else’s recaps though!

That smoothie sounds really good. I have been eating like a pig lately – I need to get back on track.

I strive for Meatless Mondays (and Fridays), I always take my lunch to work, and 1/2 my plate is always raw! As for the smoothies – I stick to more veggie based ones, and I completely fail in writing my food down! Great Challenge!

Maybe you’d like My Fitness Pal where you can take pics of the UPC code with your phone to log your food.
