Foodie Friday and More

Yay for a holiday weekend! Boo for the “unofficial” end of summer. We’ll be grillin’ and chillin’ here as usual and since cukes are plentiful in the garden right now (I got to them before the dang deer did) this easy, tasty salad will play a starring role. I’m linking up for Foodie Fridays at a Dish of Daily Life.  Lots of recipe goodness there so check it out.

cucumber salad

Cool as a Cucumber Salad

  • 2 big cukes
  • 1 small red onion
  • 1 stalk celery
  • 1/2 red bell pepper
  • 1-1/2 t salt
  • 1/4C white vinegar (or to taste)
  • 1T Stevia (or to taste)
  • 2T fresh dill (2t dried)
  • Pinch of celery seed (optional)

Slice the veggies as thinly as you can (a mandolin would be great here). Toss with salt and drain in a colander for 20 minutes. Rinse well. Add the vinegar and sugar. Stir in dill and celery seed. Voila! Feel free to adjust the vinegar and Stevia to suit how sweet/sour you prefer. Or go ahead and use sugar instead.

One more thing: Since we’re losing daylight quickly, I know many of you are out running in the dark.

    We’re racing! Just a 1 mile OWS race on Sunday. I’m hoping for some grilling too since it won’t be summer temps here much longer!

    That salad recipe is just my kind of thing. May have to make it for the Sunday cookout we are having! I am VERY sad to have summer come to an end. It was a blink of an eye.

    Love the idea of the app and keychain- definitely something I want to have as I start running early mornings this year.

    I for one am thrilled for Autumn in about a month, but I know it’s hard to let the long days and grill-outs go. Hoping you enjoy a mild fall and don’t get as cold up there this year!

    Cucumber salad sounds like a great side to what we grill this weekend! An app you can use by simply pushing a button sounds like a smart idea.

    I just bought cucumbers today! I’m making a cucumber, tomato, feta salad with a little oregano for dinner. Along with some hummus, pita, olives and an arugula salad. I’m going all Mediterranean tonight, apparently! I love cucumber salad, I’m going to pin this to try later. Happy weekend!

    That app sounds very cool. Road ID makes one too, that notifies someone you’ve chosen, if you stop moving for a designated period of time. Of course, I never use it…

    I wonder what happened…I thought I commented here! I do love cucumber salad, and I am a vinegar addict. That app is very cool…I usually run in the morning friends, but I’m going to keep it in mind for when I run on my own. Better to be safe than sorry!
