Shamrock Protein Shake

St. Patty’s Day is kind of a big deal here in the Chicago area. Everybody’s Irish, the river gets dyed green and there’s a parade like no other, usually with crappy, blustery cold weather, but still. When we were kids we HAD to go to a certain place for a Shamrock Shake. Sometimes it was minty, sometimes it was more vanilla-tasting but it was ALWAYS fun.

Fast forward to now. I love the idea of a Shamrock Shake but nowadays I want my food to work for me. So I came up with a healthified version. One that’s a beautiful green, courtesy of fresh spinach, but also packs a protein punch, thanks to vanilla protein powder.

A Shamrock Shake even my 13-yr. old “vegetarian” that eats no veggies to speak of, loves.

Shamrock Protein Shake

Ingredients
  • 1C Milk (I used almond)
  • 1 Scoop Vanilla Protein Powder
  • 1 Big Handful Fresh Spinach
  • ½ Frozen Banana Chunks
  • ¼ Avocado
  • ⅛t Mint Extract
  • ¼t Vanilla Extract
  • 1 pkt Vanilla Stevia
  • Handful of ice cubes
Instructions
  1. Combine all ingredients in a blender. Whip up until smooth.
  2. Pour in a glass and enjoy!

    Sounds yummy. LOL at the vegetarian who eats no veggies. Sadly fairly common.

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did. I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
