Dinner for Everyone Fast Pho with Tea Broth

Let me be upfront here with you: I’ve never used a grocery delivery service before, nor have I ever used a meal kit to save time. No siree. I’m the kind of girl who takes the time to shop and select every single ingredient, fondle the produce, you get the picture. I’m a very “hands on” sort  of control freak…I mean cook.

Since my business has taken off though, I’m working. A lot. I don’t have time to fondle the produce. In fact I barely have time to make it to the grocery store at all. My meal rotation here has fallen off track and into a deep rut. It was time to get over myself and try something different.

My friends at Peapod sent me this beautiful cookbook: Dinner for Everyone by Mark Bittman (you know I read cookbooks for pleasure right?) and tasked me with making a dish from it, with groceries ordered from Peapod.  Challenge accepted!

I perused the book. OMG you guys! Best-selling, New York Times author Mark Bittman filled this gorgeous book with 100 simple and delicious dinner ideas, then presented them 3 ways: Easy, Vegan and All out for company. Love it!

I made the Fast Pho while my older daughter had friends over for a Bachelorette watch party, which is code for I may have been a tad distracted. Nevertheless, putting the meal together was quick and easy, thanks to simple step-by-step instructions and having everything I needed at my fingertips.

IT was as simple as browning the meat, making a quick tea broth, cooking the noodles in it, then topping with herbs, sprouts, etc. The beef was tender and flavorful, the chilis were vibrant and the herbs were so fresh! Color me impressed.

    No to all of your questions, but you have me intrigued! My husband does almost all of the shopping and cooking (and will set me up on his late work days so I don’t have to shop). Quick and easy is my M.O. I will definitely check it out!

    Luckily I’m not so busy that I can’t grocery shop because yeah, I like to pick out my own produce. I know many, many people that do though & it’s a wonderful option for busy people.

    I have made pho-like soups, and I am not scared of fish sauce, LOL! Although mostly I reserve soups for winter, turning more to salads for summer. We both love pho here though!

    Interesting post, of course in Italy we have delivery services but this is amazing and the food looks delicious.
    However the daily shopping of food is my “job” since the day I retired…….. but my wife says that my delivery service must be improved!!!!!

    I have never used a delivery service or a meal kit either but I wouldn’t rule out giving it a try. That pho looks delicious and I am a pho-lover!

    I also love to make my own Pho! That way I can add everything I like. Easy to customize for vegans and meat eaters alike. I am that person that likes to touch all the produce 🙂 I have used Peapod and it’s great for when you are super busy!

    You are far braver than I, Chef Marcia. I have not done any of the meal kits, delivery services, nor have I even thought of Pho LOL. This looks really convenient, though, and the food looks good 😉

    I’ve tried a few of the different meal delivery services and they were okay, but a little pricey. I have used Peapod before (for work events) and I do love the convenience of it!

    I’ve heard of Peapod but had no idea they offered meal kits. That pho looks yummy!

    I’ve tried Hello Fresh and Blue Apron but if I remember correctly, I liked Hello Fresh more than Blue Apron.

    Ah! So I have his latest cookbook and flagged that recipe but seemed a bit daunting with all the ingredients. So much easier if you receive everything to cook with 😉

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did. I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
