Coffee-Collagen Popsicles

It’s been so hot this summer all I can do after a run (or ever) is flop down with something cool and refreshing. These coffee-collagen popsicles are perfect.

I simply brew coffee as I normally would, add in Now Foods Collagen Peptides, a splash of half and half or creamer of your choice, and I sweetened them up a tad with a drop of Cinnamon Vanilla Better Stevia from Now Foods.  Pour into popsicle molds, freeze them for several hours or overnight and you’re good to go! Just an FYI, the mixture makes killer ice cubes to throw in your iced coffee as well.

I’ve been putting collagen in my coffee for years now and it makes such a difference! I love what it does for my joints, hair, skin and nails…even my gut! Collagen Peptides dissolve quickly and completely and have zero taste.

    Someone once said collagen was really good for endurance runners and I completely forgot about that until now. I guess they would have been referring to it in terms of strengthening the joints. I think I’ll have to look into that. Those popsicles look lovely!

    What a brilliant idea!
    I use collagen all the time in my green tea but I never thought of using it in popsicles.

    Even though I’m not a coffee drinker, these popsicles sound very tempting. That Cinnamon Vanilla Better Stevia needs to find its way into my cupboard!

    That sounds awesome. I love my coffee and use flavored creamers instead of flavored sugar.

    I hate to say it, but since I hate coffee — ewww! Sorry. Actually not much of a Popsicle fan either. Every time I make some they languish in the freezer until I get rid of them the next year,, LOL!

    I’m sure these are great if you love coffee, and I know most normal people do. Never claimed to be normal. 🙂

    My cooling towel (and cool it running clothes) help me stay cool. Plus running early.

    I also add collagen to my coffee every morning. That is a great idea to make iced cubes for iced coffee. Love it!

    My favorite popsicle flavor is chocolate.

    oh that cinnamon vanilla looks amazing. My freezer is too small for popsicle molds, but those ice cubes are going to happen.

I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
