Udi’s Gluten-Free French Toast Towers

Back in the dark ages when I went to school, on the first day my mom would walk all six of us to school and we’d line up by grade number on the playground tennis court and wait to see which teacher “claimed” us. It was mysterious and exciting. But still, the end of summer was sad.

This week, my own kids go back to school. Unlike me back in the day, they already know who their teachers will be, but it’s exciting to start a new school year….and a little bit sad to say good-bye to summer….all the same.

To help ease the pain of setting that early alarm, I wanted to do something special. So I planned a back-to-school breakfast and headed to Walmart for some Udi’s Gluten-Free Whole-Grain Bread. Udi’s bread has been a staple here for years. I love it toasted and topped with avocado, tuna, nut butter, scrambled eggs….so many ways. Did you know Walmart has a wide selection of gluten-free foods? You do now!

While I was grabbing the bread, some of the other Udi’s gluten-free frozen foods caught my eye. While we were in Italy over the summer, my older daughter discovered her love of pasta with alfredo sauce.

I snagged a bag of Udi’s Chicken Alfredo and let her test it. It took just 10 minutes to heat up and she had a hot and satisfying meal.

Delicious pasta in a cheesy, creamy sauce with plenty of tender, white meat chicken pieces as well as broccoli. She gave it two thumbs up. This will be so easy to make in the morning and send with her in her thermos for lunch at school.

For my special back-to-school breakfast, I took a classic family favorite and pumped it up with flavor, fun, and some extra protein to keep the kids satisfied and engaged at school.

Ingredients
  • 4 Slices Udi's Gluten-Free Whole Grain Bread
  • ½C Milk of your choice
  • ½ Scoop of your favorite vanilla protein powder
  • 2 Large eggs
  • ½t Vanilla extract
  • 2T Butter or oil for the pan
  • 4 Wooden skewers, broken in half
  • Fillings of your choice: Assorted fruit, breakfast sausage, jam and nut butter are all tasty options. I used berries, sauteed cinnamon apples, antibiotic-free chicken breakfast sausage, bananas and almond butter. The possibilities are endless.
Instructions
  1. Heat butter or oil in a skillet.
  2. Whip together eggs, milk, protein powder and vanilla in a bowl.
  3. Soak each slice of bread one at a time in the mixture and place on hot skillet, turning once so each side is golden brown.
  4. Remove from pan and cut each slice into quarters.
  5. Create a tower by alternating a square of french toast with your fruit or topping of choice. Thread a skewer through each one to hold together.
  6. Dust with powdered sugar, serve with maple syrup for dipping or enjoy them just as they are.

    I haven’t seen this product in our Walmart but I will look! I do love French toast , what a nice back to school treat! I still remember all the excitement when school started especially when my oldest started kindergarten. He was so excited and I was a nervous wreck, oh the memories ๐Ÿ™‚ Happy first week of school! I don’t miss that paperwork!

    Fave back-to-school memory: Brand new outfit, Mom always did my hair fancy, new backpack with brand new supplies and boxes…I like new things and new starts.:)

    Had no idea Walmart had gluten free. Love the French toast towers! As to back to school memories: I was always excited to get that envelope in the mail to tell us what class we had and also what school supplies we needed to get. I loved getting new school supplies!! ๐Ÿ™‚

    We aren’t gluten free here, but I’ve heard great things about Udi’s products. That French toast looks awesome!

    We are still 3 weeks out from starting school – it’s so weird to see all of the back to school posts on facebook LOL.

    I keep catching myself staring at the Udi products while I’m wandering through Target. I haven’t tried them yet but that french toast tower has really got me considering adding them to our weekend list ๐Ÿ˜‰ Thanks for sharing!

    Never heard of Udi’s but those food pictures are mouthwatering!!! That french toast, YUMMY!!! I read somewhere that it is even more important to make food look appetizing with kids – but heck, that tower presentation would work for me anyday, too. =)

    You just made my stomach growl. I love French Toast!! I typically don’t buy gluten free – no need in my household. Udi’s looks like they have a pretty nice selection, though.

    I had no idea Walmart had so many GF choices. Seems to be really catching on! And that’s so cute that you had such a sweet back to school breakfast. My breakfast was usually grabbing a poptart on the way out the door!

    I haven’t seen all those delicious GF options at my Walmart yet, but I hope that means they are on their way! Those French Toast Towers look amazing – and since my kids prefer breakfast foods for all meals, we might have to switch up our dinner routine one night ๐Ÿ™‚ There is something about a new backpack and new school supplies that makes the beginning of the year feel magical!

    What a fun idea! Love Udi’s Gluten Free bread but I’ve never made French Toast with it. Gotta give it a try.
