Holiday Weekend Eats!

My recipes for May are the perfect kickoff to summer.
They’re delicious and festive without busting the calorie bank.
Asian Grilled Chicken & Broccoslaw

4 skinless, boneless chicken breasts
3 Garlic cloves, minced
1/4C Low-sodium soy sauce
3/16C Agave nectar
1T Lime juice (I won’t tell if you don’t have a lime laying around and use lemon)
1/4t Curry powder
1/2t Crushed red pepper flakes

1. Combine all ingredients except chicken to make a marinade.

2. Add chicken and let sit in fridge for at least 1 hour and up to 5 hours.

3. Grill chicken, reserve marinade and heat to boiling on stovetop.

Serve chicken with marinade on the side.
Serves 4

Broccoslaw

4C Broccoslaw. I buy it in a bag from Trader Joe’s where else? It’s versatile, healthy and divine.
1 Bell pepper. I used 1/2 yellow and 1/2 red because I’m fancy that way.
1/2C Diced celery
1/3T Stevia
1/2C Plain Greek Yogurt
1T Red Wine Vinegar
1t or more Yellow Mustard
1/4t Salt
1/4t Paprika
1/8t Ground Pepper
Pinch of Celery Seed

1. Combine yogurt, stevia vinegar, mustard and spices to make dressing.

2. Add in diced peppers and celery and gently mix.

3. Finally add in the broccoslaw and mix to coat evenly.

4. If you’re feeling extra fancy, sprinkle on some slivered almonds, accent with avocado wedges, whatever you like.

* Don’t be afraid to sub in any veggies you like. Snap peas are nice…sneak in some diced jalapeno if you’re feeling extra sassy.

    Thanks, Marcia. I'm going to try the chicken. It sounds great. As far as broccoslaw – I wish we had Trader's Joes in Colorado – something to do with our law stating no liquor sales in grocery stores. We do go there everytime we visit Chicago. Maybe Whole Foods has this.
