Carrot Spice Bread

Cooler temps plus a boatload of carrots ready in the garden, means I needed to bake! I love me some carrot cake but I wanted something more nutrient dense.
What better way to celebrate the change of season than baking up some spicy, moist bread studded with flecks of carrot and tender coconut? The aroma as it baked was nothing short of amazing. I used white whole wheat flour, which makes a fairly dense bread. Feel free to use all-purpose flour if you desire a fluffier texture.

2C white whole wheat flour
1t salt
1t cinnamon
1/4t ground ginger
1/4t ground cloves
1/2t baking soda
1/2t baking powder
2/3C sugar
1/4C olive oil
2 eggs
3/4C grated carrots
1/8C shredded coconut (optional. Nuts or raisins would be great too.)
1/3C Plain Greek Yogurt

Combine first 7 ingredients in a large bowl. Combine remaining ingredients in a mixing bowl. Add the dry ingredients from the first bowl to the mixing bowl and combine just until moist. Pour into greased loaf pan.
Bake at 350 for approx. 40 minutes.
Cool, slice and enjoy!

    Your recipe sounds good! I’ve never had carrot bread before. I like that it has lots of spice, coconut and is low in fat.

    Love me some carrot cake! Yum! And if I just make icing and eat it straight from the bowl rather than on the cake, it doesn’t count, right? ๐Ÿ™‚

    I’m getting my moms birthday party together and she said her favorite cake is carrot cake (actually she said German Chocolate and then remembered that was my dads favorite). This gives me some great cake ideas to add a little more flavor.
