It’s Thursday, the holiday weekend is just about here, and face it, I feel like partying! But it’s not quite time to let loose, I’ve got a sickie at home with me today, a race on Saturday so Lindsay’s Pin-It Party sounds perfect. First things first: Who doesn’t need food ideas for weekend get-togethers? Here are some quick easy ones.

Balsamic Shallot Green Beans

These Balsamic-Shallot Green Beans look fancy but they’re so easy. Cannot wait to harvest some green beans out of our garden, although I’m not holding my breath on that. Ha!

Barbecue Roasted Veggies

I am fo sho making these Barbecue Roasted Veggies this weekend. A crowd favorite!

This Strawberry Yogurt Pie was a huge hit on Mother’s Day. Creamy, delicious and won’t break the bank on calories.

These Broccoli Quinoa Patties have to be one of my favorite things I’ve made recently. Nutrient-dense and delicious!

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did. I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
