Cherry-Apricot-Collagen Granola

In case you missed my Facebook Live yesterday over on the MHS Facebook page I shared Healthy Travel Tips and made my Cherry-Apricot-Collagen Granola on behalf of Great Lakes Gelatin. Here’s the recipe so you can make it yourself. I hope you love it as much as I do. Remember you can use whatever dried fruits and nuts you like!

Cherry-Apricot-Collagen Granola

Total time: 30 mins
Serves: 1 large pan
Ingredients
  • 4C Old Fashioned Oats
  • 1-1/2C raw, unsalted nuts/seeds (I used ½C ea. almonds, sunflower seeds, pecans)
  • 1t Sea Salt
  • ½C Coconut Oil
  • ½C Honey or Maple Syrup
  • 1t Vanilla Extract
  • 4T Collagen Hydrolysate
  • ⅔C Chopped Dried Fruit (I used tart cherries and apricots)
Instructions
  1. Combine oats, nuts and salt in a large bowl.
  2. In a pan melt coconut oil and honey/maple syrup to combine.
  3. Add in vanilla extract and dissolve collagen hydolysate in the mixture
  4. Add wet ingredients to the oat/nut mixture and mix until well coated.
  5. Turn out onto a rimmed baking sheet lined with parchment paper.
  6. Bake at 350 for approx 20 minutes
  7. Mix up the granola halfway through baking.
  8. Allow to cool
  9. Sprinkle dried fruit on top.
  10. Break up into pieces and enjoy!

This recipe is super easy to make and it makes my kitchen smell wonderful. I’m definitely taking a batch with me when I head to Tokyo later this month. Eek!

    This looks amazing. I’m not the best in the kitchen so I shy away from difficult recipes but this looks quite straightforward to make! I’ll also take a look at the video – thanks for sharing!

marciashealthyslice I'm a working mom who, as part of a mid-life challenge, decided to run a marathon for kicks. I didn't plan on it becoming a hobby, but it did. I qualified for Boston at my second marathon and finished the 6 World Marathon Majors in London in 2019. Set no small goals. You never know what you're capable of until you try!
