Gluten-Free, Low-Sugar Strawberry Crumble

We all know what to do when life gives us lemons, but what about when life gives us strawberries? Lots of them? That’s exactly what happened when Thing 2 went strawberry picking and came home laden with basket upon basket of luscious berries, still warm from the sun.

We’re enjoying as many as we can fresh, of course, but I also got busy in the kitchen.

I’ve always loved a good berry crumble, but many recipes are loaded with refined sugar and since going gluten-free, I figured crumb toppings were off-limits. But what if I could make a healthier version of this summertime favorite?

I went into the test kitchen and came up with this gluten-free version that has no refined sugars. It’s a total winner if I do say so myself.

Instead of refined, empty-calorie sugar, I went with my old friend coconut sugar. Coconut sugar is lower on the glycemic index than refined white sugar and contains the minerals iron, zinc, calcium and potassium, as well as polyphenols and antioxidants.

I also traded in regular butter for Virgin Coconut Oil. 

I layered the sliced berries in a baking dish and topped them with the crumb mixture. It was soooo fragrant and delicious when it emerged from the oven…

…and a scoop of ice cream put it right up over the top. I won’t even tell you how quickly this Crumble disappeared. Here’s how you make it:

Gluten-Free, Low-Sugar Strawberry Crumble

Serves: 8 servings
Ingredients
  • Topping
  • 1C Gluten-free Oats
  • ¼C Coconut Sugar
  • ¼t Ground Cinnamon
  • Pinch Nutmeg
  • ¼t Salt
  • ⅓C Nuts of your choice
  • 4T Coconut Oil, Melted (or butter)
  • Filling
  • 4C Strawberries hulled and sliced
  • 1t Vanilla Extract
  • 3T Coconut Sugar
  • 2T Gluten-Free Cornstarch
Instructions
  1. Preheat oven to 375F.
  2. Grease an 8"x8" baking dish
  3. Topping
  4. Process ½C oats. Add in sugar, cinnamon and salt.
  5. Add nuts and pulse
  6. Add remaining ½C oats
  7. Pour in melted coconut oil or butter.
  8. Pulse 2-3x more.
  9. Filling
  10. Combine berries, vanilla, sugar, and corn starch in a mixing bowl and toss til berries are coated evenly.
  11. Spread berries evenly in baking dish.
  12. Top with crumb mixture.
  13. Bake 40 minutes.
  14. Remove from oven; allow to cool a bit, then enjoy!

    I can literally smell that strawberry crumble coming out of the oven!!!

    This sounds fantastic, Marcia! Now I wish I’d bought the 2 lbs on strawberries at the store yesterday (I don’t normally go through that many in a week).

    Yum. I would use all non-healthy ingredients cuz that’s all I have.
