Gluten-Free, Lower-Sugar Banana Bread

It’s spring and all, but with a return of cold, blustery weather, I’ve been baking lately. Banana bread is one of Thing 2’s favorite things and now that she’s finally back to in-person school, I thought a little something fresh from the oven would be a real treat. I was right.

This isn’t just any banana bread though. Banana bread can be packed with more sugar than you think, so I built a better version. This one’s gluten free and I sweetened it just a little with some maple syrup. I also used coconut oil instead of butter, and added chia seeds and some ground flaxseed for plant-based Omega-3s.

I’ll stop blabbing now and give you the recipe. It’s SO darn good when it’s still warm from the oven and it made the house smell amazing.

Gluten-Free, Lower-Sugar Banana Bread

Ingredients
  • 2-3 Very Ripe Bananas, Mashed
  • ⅓C Butter or Coconut Oil
  • 1-1/2C Now Foods Gluten-Free Baking Mix
  • 1t Baking Soda
  • ¼C Honey or Maple Syrup
  • 2 Eggs
  • 1t Vanilla
  • 2T Chia Seeds
  • 2T Ground Flax Seeds
  • Pinch of Salt
Instructions
  1. Preheat oven to 350 F
  2. Mix together bananas and butter or coconut oil. Add eggs, vanilla and honey or maple syrup. Blend until well combined. Mix in dry ingredients but don't over beat.
  3. Pour batter into a greased loaf pan.
  4. Bake for 50 minutes, until toothpick inserted into cake comes out clean.
  5. Remove from oven and cool .
  6. Enjoy!

    we love banana bread around here! I did not know Now made baking mixes. I like the addition of the chia seeds. Looks great!

    First — I have to say your banana bread does look delicious!! But —- This baking mix is basically the gluten free version of Bisquick???? Is that a correct assumption? Why not just use an alternative flour?
