Weekend Update and a Freekeh Pilaf

Gosh it was a crazy weekend, not to mention the weather suuucked. Saturday was a rain-all-day affair. Sunday it was just plain cold. And crazy windy.

There was lots of child taxi action. To parties. And playdates. And sleepovers. And movies, oh my.

Tomorrowland wasn’t my bag but it made Thing 2 happy so there’s that.Β 

There was a dog bite at the playdate. Gasp! It’s not a big deal, thankfully, but I’d be horrified if one of our dogs bit someone, let alone a child. I got a killer strength session in. But not the open water swim I’d planned. No run either. What?? Don’t worry, I ran today to make up for it. The thing about sprint tri training that jumps out at me most is that there’s not a whole lot of running, relatively speaking.

I’ve been experimenting with side dish ideas for Thing 1’s graduation/birthday party later this month. I used the Organic Freekeh (I like to say Freek-aye but it’s actually pronounced Freek-uh) I received when I went to the NOW Foods Immersion Event and gave it a Southwestern twist. What is Freekeh? It’s an ancient grain. Young green wheat, roasted and cracked, with a slightly sweet, nutty flavor. Prepare it similar to the way you’d make quinoa or rice. It has more fiber than almost any other grain and is a good source of protein. This pilaf came out pretty great if I do say so myself and it satisfied my craving for something with south-of-the-border flair.

Freekeh Pilaf

Southwestern Freekeh Pilaf

Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Serves: 3 Cups
Ingredients
  • 1C Freekeh
  • ¾t cumin
  • ½ red pepper minced
  • ½ C red onion, minced
  • ½C snap peas, diced
  • ¼C chopped fresh cilantro
  • juice of half a lime
  • ⅛C + 1T olive oil, divided
  • 2 cloves, garlic, crushed
  • ½t dried crushed red pepper
  • Salt and pepper to taste
Instructions
  1. Cook Freekeh according to package directions.
  2. In a separate pan, saute onions and peppers in 1T olive oil. Add snap peas and cook a bit more.
  3. When freekeh is tender and finished cooking, remove from heat, add veggies to it along with seasonings, olive oil and lime juice.
  4. Serve and enjoy.

    Yay! Loved to see that you joined us again today! Thank you, these sound wonderful! I do like Freekah, and it is pretty cheap….well when I have found it πŸ™‚ I think we will let the beef in the background slide hehe…it does look good though πŸ˜‰

    The dog bite sounds awful. I would be horrified if my dog did that as well. Even the smallest bites can get really infected. I have never heard of Freekeh… it sounds like, well… me. A Freekeh… Lisa is a Freekeh. I think I’ll like it.

    I haven’t seen the movie and I have not heard of the Freeky rice, I am intrigued though (about the rice, not the movie) πŸ™‚ I would like to see the Aloha movie with Bradley Cooper, that sounds more my speed! Dog bites are scary! I would hate for something like that to happen to someone I knew!

    Open water swim, I love it! I am thinking at a duathlon race at the end of june: running and swimming in open sea.
    Freekeh looks delicious.

    I have not tried Freekeh, but it sounds like something i would love. There’s so much I go right past in the store because I like super simple cooking, so food ideas in blogs helps me πŸ™‚
